Tried the Culinary Program's widely acclaimed sourdough project over the winter, but developments didn't. Now that temps overnight are staying in a decent range, it's time again.

Devoted to making new stuff as often as possible. The Institute practices and promotes an active process of Figuring It Out. Theory and documentation of approved methods are all fine and good, until they get in the way of making stuff while you wait to understand the Right Way.
